Preparation
- Place the marinade ingredients in a bowl and stir to combine.
- Drain the jackfruit through a sieve, rinse well under running water, and let it drain.
- Add the jackfruit to the marinade, mix well, and let it marinate for a few hours, or preferably overnight.
- Coarsely puree the mixture with a hand blender or in a food processor, mix in 100 g of breadcrumbs, and roll the mixture into walnut-sized balls.
- Heat the deep fryer to 175°C.
- Mix 100 g of flour with water until smooth and let it sit for 5 minutes (wet batter); place the remaining flour in a bowl.
- First coat the balls in flour, tap off any excess flour, then dip them in the wet batter, coat with breadcrumbs, and fry in hot oil until crispy.
The balls can also be deep-fried in a pan with plenty of oil. To do this, turn the balls several times in the oil. - Serve with a mixed salad, flatbread, and vegan tzatziki.
The recipe for 4 portions makes approx. 25 balls.
Preparation in an air fryer
Spray or brush the jackfruit balls with a little oil, place them side by side in the air fryer, and cook at 200°C for 15–17 minutes until crispy. Shake the basket occasionally so the balls turn and brown on all sides.
