Preparation
- Place the onion and garlic in the mixing bowl, chop for 4 seconds/speed 5, use the spatula to push the mixture down, and chop again for 4 seconds/speed 5.
- Add the zucchini and carrots and chop for 3 seconds/speed 10.
- Transfer the zucchini-carrot mixture to a colander and squeeze well until the mixture is almost dry.
- Add the olive oil to the mixing bowl, add the mixture, and cook for 5 min./90°C/speed 1.
- In the meantime, toast the sunflower seeds in a pan without oil and transfer them to a bowl.
- Add the herbs, salt, pepper, and eggs to the zucchini-carrot mixture in the mixing bowl and mix for 10 seconds/pulse/speed 4.
- Add the sunflower seeds and breadcrumbs and mix for 15 seconds/pulse/speed 4.
- Transfer the mixture to a bowl and let it rest for 2–3 minutes.
- Scoop out portions of about 50 g from the mixture, roll them into balls, and flatten them into patties about 1 cm thick.
- Coat the patties in breadcrumbs and fry them in olive oil over medium heat until golden brown.
Preparation in an air fryer
Spray or brush the breaded patties with a little oil, place them side by side in the air fryer, and cook at 200°C for 15–16 minutes until crispy, turning them once after 10–11 minutes.
