Zucchini and Carrot Patties

Crispy and packed with vegetable goodness! These zucchini and carrot patties are a delicious delight – and completely gluten-free. They’re quick and easy to make in the Thermomix.

onion (peeled and halved)

garlic clove (peeled)

Zucchini (washed, cut into large pieces)

carrots (washed, cut into large pieces)
some olive oil

sunflower seeds (or pumpkin seeds or pine nuts)

herbs de Provence (or herbs of your choice)

Preparation

  • Place the onion and garlic in the mixing bowl, chop for 4 seconds/speed 5, use the spatula to push the mixture down, and chop again for 4 seconds/speed 5.
  • Add the zucchini and carrots and chop for 3 seconds/speed 10.
  • Transfer the zucchini-carrot mixture to a colander and squeeze well until the mixture is almost dry.
  • Add the olive oil to the mixing bowl, add the mixture, and cook for 5 min./90°C/speed 1.
  • In the meantime, toast the sunflower seeds in a pan without oil and transfer them to a bowl.
  • Add the herbs, salt, pepper, and eggs to the zucchini-carrot mixture in the mixing bowl and mix for 10 seconds/pulse/speed 4.
  • Add the sunflower seeds and breadcrumbs and mix for 15 seconds/pulse/speed 4.
  • Transfer the mixture to a bowl and let it rest for 2–3 minutes.
  • Scoop out portions of about 50 g from the mixture, roll them into balls, and flatten them into patties about 1 cm thick.
  • Coat the patties in breadcrumbs and fry them in olive oil over medium heat until golden brown.

Preparation in an air fryer

Spray or brush the breaded patties with a little oil, place them side by side in the air fryer, and cook at 200°C for 15–16 minutes until crispy, turning them once after 10–11 minutes.
