Salad with Vegan Sweet-and-Sour Jackfruit Nuggets

Our vegan nuggets with a sweet-and-sour flavour are a delicious meat alternative that’s easy to prepare at home. Paired with a fresh salad, they make for a light summer meal.

Ingredients

4 portions
    Marinade
  • 2 dspagave syrup
  • 3 dspneutral-tasting oil (e.g. canola oil, sunflower oil)
  • 2 dspsoy sauce
  • 2 dspdark balsamic vinegar
  • 1 dsplemon juice
  • 30 mlwater
  • 2 Piecegarlic cloves (finely diced)
  • 2 tsptomato paste
  • 0.5 tspred curry paste
  • 1 tsprosemary (dried or fresh and finely chopped)
  • 1 tsporegano (dried or fresh and finely chopped)
  • 1 tspsalt
  • 0.5 tsppepper
  • 0.5 tspcumin
  • 1 tspsweet paprika powder
  • Nuggets
  • 400 gyoung jackfruit in brine
  • 100 gflour
  • 125 mlwater
  • 120 gLEIMER Panko Breadcrumbs, alternatively: Spelt Breadcrumbs

Preparation

  • Place the marinade ingredients in a bowl and stir to combine.
  • Drain the jackfruit through a sieve, rinse well under running water, and let it drain.
  • Add the jackfruit (cut into nugget-sized pieces if desired) to the marinade, mix well, and let it marinate for a few hours or, preferably, overnight.
  • Preheat the deep fryer to 175°C.
  • Mix half of the flour with water until smooth and let it sit for 5 minutes (wet batter), place the remaining flour in a bowl.
  • First coat the nuggets in flour, tap off any excess flour, then dip them in the wet batter, coat with panko, and fry in hot oil until crispy. 
    Alternatively, the nuggets can be fried in a pan with plenty of oil.
  • Serve with a mixed salad, flatbread, and dip.

 

The recipe for 4 portions makes approx. 25 nuggets. 

Preparation in an air fryer

Spray or brush the nuggets with a little oil, place them side by side in the air fryer, and cook at 200°C for about 10 minutes until crispy, turning them once after 7–8 minutes.
