Salmon in thyme crust

This sophisticated salmon dish is a breeze to make in the Thermomix and delights with its rich herbal flavours. LEIMER breadcrumbs provide a wonderfully crispy topping.

LEIMER Breadcrumbs (alternatively: Spelt-, or wholemeal breadcrumbs, etc.)
4 Piece
salmon fillets (200 g each)
25 g
Parmesan (in one piece)
2 sprigs
thyme
2 sprigs
flat-leaf parsley
2 tsp
hot mustard

softened butter
1 Piece
clove of garlic (peeled)
0.5 tsp

pepper

lemon juice, salt and pepper to season

Zubereitung

  • Place the Parmesan, thyme, parsley and garlic clove into the mixing bowl and chop for 10 seconds/speed 8.
  • Add the butter and mustard and whisk for 1 min/speed 4 until frothy.
  • Add the breadcrumbs, salt and pepper, mix for 10 sec/speed 4, push down with the spatula and mix for a further 10 sec/speed 4.
  • Shape the finished gratin mixture into a roll approx. 3 cm thick using cling film and chill.
  • Grease an ovenproof dish.
  • Preheat the oven to 200°C on the grill setting.
  • Season the salmon fillets with lemon juice, salt and pepper.
  • Heat the butter in a frying pan and briefly sear the salmon fillets on all sides.
  • Place the salmon fillets in the dish.
  • Cut the gratin mixture into thin slices, arrange them over the salmon fillets and bake in the oven for 8–10 minutes.
  • Serve with steamed broccoli and parsley potatoes.
