Zubereitung
- Place the Parmesan, thyme, parsley and garlic clove into the mixing bowl and chop for 10 seconds/speed 8.
- Add the butter and mustard and whisk for 1 min/speed 4 until frothy.
- Add the breadcrumbs, salt and pepper, mix for 10 sec/speed 4, push down with the spatula and mix for a further 10 sec/speed 4.
- Shape the finished gratin mixture into a roll approx. 3 cm thick using cling film and chill.
- Grease an ovenproof dish.
- Preheat the oven to 200°C on the grill setting.
- Season the salmon fillets with lemon juice, salt and pepper.
- Heat the butter in a frying pan and briefly sear the salmon fillets on all sides.
- Place the salmon fillets in the dish.
- Cut the gratin mixture into thin slices, arrange them over the salmon fillets and bake in the oven for 8–10 minutes.
- Serve with steamed broccoli and parsley potatoes.
