Preparation
- Wash the lettuce, spin dry and tear into bite-sized pieces. Slice the cucumber and carrots. Cut the paprika into pieces. Place everything in a bowl, add the corn and mix.
- Cut the feta into equal-sized triangles.
- Mix the tempura batter according to the instructions on the packet: Place the batter in a bowl and mix with water until lump-free using a whisk. Leave the batter to stand for 5 minutes.
- Stir the batter again, pull the feta through the batter and leave to drain briefly.
- Heat the clarified butter in a frying pan and fry the feta wedges in batches on all sides for approx. 5 mins. until golden brown.
- Arrange the salad on plates, place the feta wedges on top and garnish with a dressing of your choice. A yogurt or honey-mustard dressing, for example, goes well with this.
