Prawns with vegetables

For light summer cuisine: How about delicious prawns and vegetables, refined with spicy breadcrumbs made from LEIMER Mutschelmehl?

Ingredients (for 4 portions)

Small chillies

Raw prawns
70 g
LEIMER Mutschel flour, alternatively: breadcrumbs or spelt crumbs

  • Cut broccoli into sprouts, blanch in plenty of salted water for 4-5 min, drain and drip off well.
  • Heat olive oil in a pan, fry peeled garlic cloves and chillies briefly.
  • As soon as the garlic takes on colour, add the raw prawns and fry on both sides for 2 min. each.
  • Remove the prawns and keep warm.
  • Roast the LEIMER Mutschelmehl in the remaining fat until golden brown, add the prawns and broccoli.
  • Season to taste with salt. Serve with baguette.
