Classic Crisp Application

Application

1. Dry mix as Predust

  • dust the raw product with LEIMER Crisp

2. Wet batter

  • mix 1 part LEIMER Crisp with 2.5 to 3 parts water (max. 20°C)
  • mix for 30 seconds  
  • let it sit for 5 minutes
  • pick-up and viscosity depend on the mixing ratio
  • suitable for Tempura-Style dipping

3. Dry mix for breading

  • after applying the wet batter, coat the product in dry LEIMER Crisp
  • turn the product several times by hand until a slightly clumpy and uneven surface is formed
  • works best when breading 4–5 pieces in one go in a bowl
  • after breading, immediately place the product in the deep-fryer
  • deep-fry in vegetable oil at 175°C for a few minutes
  • frying time depends on the size of the breaded items and their intended use
