Zucchini-Carrot-Burgers

7th May is called the “Day of Zucchini” in Bella Italia, thus “Giorno del Zucchetto”.

Ingredients

  • 250 g small zucchini
  • 150 g carrots
  • 1 onion
  • 1 clove garlic
  • 4 tbsps oil
  • 150 g sunflower seeds
  • 1 tsp herbs of Provence
  • 3 eggs
  • 100 g LEIMER breadcrumbs
  • salt/pepper

Cooking instructions

Grate the zucchini and the carrots coarsely. Roast the sunflower seeds gently in the pan without fat. Chop the onion finely and, together with the garlic, stew in oil until translucent. Then add the grated zucchini and carrots, stew for 5 minutes and let it cool slightly. Mix the remaining ingredients well together and season with salt and pepper. Form small burgers from the mass and fry them at moderate heat on both sides until they are golden yellow.

Our tips:

  • Like our cottage cheese burgers, you can take the zucchini-burgers with you as a snack.
  • Tzatziki and ciabatta go very nicely with the zucchini-burgers.
